Terracotta is the oldest material used by man for the storage of wine. Using it today for vinification means rediscovering a tradition going back thousands of years and at the same time, enhancing the value of a natural and very contemporary material that, if used correctly, is practically eternal.
When we speak of terracotta we cannot help but think of the most famous Tuscan clay, an excellent and high quality clay: the Terra Turchina clay of Impruneta.
The terracotta of Impruneta has the ideal characteristics for vinification and the ageing of wine: it is insulating and therefore protects the wine from dangerous temperature fluctuations, it is an inert material, it does not transmit any type of flavour, which sets it apart from containers in wood.
In order to overcome the problem of the natural porosity of terracotta, which would allow an excessive exchange of oxygen with the outside, causing the oxidation of the wine, Massimo Carbone realises an internal multilayer coating also in the terracotta of Impruneta, but processed with special techniques, fruit of careful study and research that, in addition to ensuring perfect oxygenation of the wine, facilitates cleaning and the work in the cellar, in this way excluding any kind of contamination.
Massimo Carbone proposes instruments for professional vinification with maximum reliability. Each container has unique characteristics and is the result of careful study as well as work of great manual ability.

The Amphora that Massimo Carbone has devised, dedicated to professional vinification, has soft and sinuous lines, with an ovoid form and a narrow base that ensures excellent stability. Wine held in oval shapes undergoes natural motions that greatly enhance the ageing processes. Our amphorae are distinguished by the uniformity of thickness throughout the entire surface and are free of edges or designs that would vary the ratio of the wine with the outside: the ratio of oxygenation is equal in all parts of the amphora. The lid, designed to remain completely inside the neck, does not alter the natural beauty of the amphora.


Characteristics

  • The oval shape, sinuous, clean and elegant favours the normal internal movements of the wine.
  • The thickness of 2.5 cm, uniform in all parts of the amphora in contact with the wine, guarantees a perfect control and ratio of the wine with the outside.
  • The double inner layer of terracotta ensures a perfect internal smoothing that closes the natural pores of the clay, thereby facilitating cleaning in the cellar and perfecting the oxygenation of the wine, excluding oxidation phenomena and contamination.
  • The terracotta of Impruneta is insulating and therefore preserves the wine from dangerous temperature fluctuations.
  • Terracotta does not transmit any type of flavour to the wine, setting it apart from wood.
  • Self-clamping hidden lid made entirely in terracotta with gasket and air chamber. Built with a false bottom to support of the rubber gasket which, together with the air chamber and the hole for the silicone plug, ensure the formation of the “headspace” indispensable for the proper ageing of wine. OUR LIDS DO NOT INVOLVE THE USE OF ANY RESINS. There is a total absence of steel and resins in contact with the wine. Moreover, the double lid in terracotta with an air chamber and without a boiler innovates the sector of closed systems applied to all the processing instruments used for agricultural products, even those other than wine. The new lid creates an optimal vacuum with parameters of ageing that are more realistic than other experiences.

The Jar by Massimo Carbone respects the most ancient canons of the traditions of Impruneta and presents itself in its imposing, monumental form.
In antique times, the jars were used as containers for oil, wine, wheat and cereals, then over time, with the advent of new materials, their use was confined to being exclusively furnishing objects. Today we are rediscovering the traditional jar as the ideal container for the storage of wine.
Massimo Carbone creates a jar which reflects the traditional designs, where every decorative element has its own raison d’être. The low edge traditionally served as a sort of grip or “handle” to move and lift the jar, while the bands located halfway on the belly were used for rolling the jars easily, without risking breakage. Ancient jars have bands that are always very worn.

Fornace Carbone proposes a lid fully realised in terracotta, the first product of its kind that is totally free of resins. A hidden plug with a unique design, studied up to the smallest detail, Massimo Carbone pushes his capacities to the limit, designing and creating a lid with millimetric precision, with a double lid in terracotta having an air chamber with boiler or plug for ageing to create an optimal vacuum with parameters of ageing more realistic than other experiences. This lid GUARANTEES A PERFECT INSULATION OF THE WINE FROM OXYGEN.
